APPLE CAKE RECIPE
Ingredients
- 5 medium sized apples, cored and cut into cubes
- 3 cups flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1/2 cup brown sugar
- 1 1/2 cup granulated sugar
- 1/4 tsp salt
- 3 eggs
- 400 gr cream cheese (at room temperature)
- 1/2 cup (125 gr) butter (at room temperature)
- Juice of 1 lemon
- 4 tbsp cranberry juice (or cider)

I’ve now made this cake 3 times. This time for Thanksgiving because it is my mother’s favourite cake and she requested it. Of course I have made a few adjustments and made it with different ratios of white to whole wheat pastry flour but it has been delicious every time
